Recipe of the Month: Persian Salad

Makes 12 servings 

Ingredients:

  • 1 cup of old-fashioned rolled oats
  • 1/4 cup of peanut butter or almond butter 
  • 1/4 cup of honey
  • 1/2 cup of dried blueberries or cranberries (low sugar)
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Preparation:

    1. Add all ingredients to a medium bowl and stir to combine. The mixture should have a sticky consistency. 

    2. Refrigerate for 30 minutes. 

    3. Scoop a tablespoon of the mixture into your hand and roll into a ball. Repeat with remaining mixture. 

    4. Store the bites covered in the refrigerator for up to a week or freezer for one month.

Chopped nuts, mini chocolate chips, raisins, mini M&M’s, crushed pretzels, chia seeds, flaxseed meal, coconut
