Recipe of the Month: Avocado Toast

Make toast a real meal with some fresh summer ingredients. The slices of toast will keep for one day if they are tightly wrapped in wax paper and stored in a refrigerator.


  • 2 slices of 100% whole wheat bread, toasted
  • ½ avocado
  • 1 medium tomato, sliced
  • ½ cup cucumber, sliced
  • 2 cups spinach
  • Black pepper
  • Red chili flakes, optional 
  • 1 tablespoon lemon juice
    1. Mash avocado with fork and spread on bread.

    2. Add cucumber, tomato, black pepper and spinach. Optional: sprinkle with red chili flakes. 

    3. Drizzle with lemon juice and serve.
