Recipe of the Month: Almond Joy Hot Chocolate

Serving size: 1 cup; 105 calories per serving


4 cups of unsweetened almond milk
¼ cup almond slices
¼ cup cocoa powder
¼ cup Splenda® sugar substitute
½ tsp coconut extract
½ cup fat free whipped cream (optional)


  1. Sauté almonds over medium-high heat until lightly toasted. Set aside to cool.

  2. Combine unsweetened almond milk, cocoa powder, Splenda® sugar substitute and coconut extract. Mix with a blender or whisk until slightly foamy.

  3. Pour mixture into a saucepan and bring to a simmer over medium heat.

  4. Serve one cup of hot chocolate in a temperature-safe cup. If desired, can add a dollop of fat free whipped cream and toasted almonds.
